Winemaking - Maturation:

Mavrou and Xinisteri must are transferred to traditional clay jars where they are fermented in the presence of a small percentage of wine and yeast deposits. The participation of wine in the distillate is greater than that which would allow the product to be called “zivania”, and as a result a more refined distillate with fine grape aromas is produced. A gentle development of a traditional product.
